  • ½ cup jaggery (grated or powdered) (adjust to sweetness preference)

  • 2 tbsp ghee (adds richness & flavor)

  • 2 tbsp desiccated coconut (optional, for extra taste)

  • ¼ cup chopped nuts (almonds, cashews, or walnuts)

  • ½ tsp cardamom powder (elaichi powder) (for aroma & flavor)

  • 2 tbsp sesame seeds or flaxseeds (optional, boosts nutrition)

  • 2-3 tbsp warm milk or water (only if needed for binding)

Instructions

Step 1: Roast the Ragi Flour

  1. Heat 1 tbsp ghee in a pan.

  2. Add ragi flour and dry roast on low flame for 5-7 minutes, stirring continuously. The flour will turn aromatic and slightly darker.

  3. Add desiccated coconut (if using) and roast for another 1-2 minutes. Set aside.

Step 2: Prepare the Jaggery Mixture

  1. In the same pan, add chopped nuts and sesame seeds. Dry roast for 2 minutes until slightly golden.

  2. In another small pan, melt jaggery with 1-2 tbsp water on low heat, stirring until it dissolves.

  3. Strain the jaggery syrup (to remove impurities) and mix it into the roasted ragi flour.

Step 3: Mix & Shape the Laddus

  1. Add cardamom powder and the roasted nuts to the mixture.

  2. Add the remaining 1 tbsp ghee and mix everything well.

  3. If the mixture feels dry, add 1-2 tbsp warm milk or water to help bind the laddus.

  4. Take small portions and shape them into round laddus using your hands.
