  • ½ cup jaggery (grated) or sugar (adjust sweetness as needed)

  • ½ cup chopped mixed nuts (almonds, cashews, pistachios, walnuts)

  • 2 tbsp desiccated coconut (optional, for extra taste)

  • 1 tbsp poppy seeds (khus khus) (optional, for extra nutrition)

  • ½ tsp cardamom powder (elaichi powder)

  • ¼ cup warm milk (optional, for softer texture)


Instructions

Step 1: Fry the Gond (Edible Gum)

  1. Heat 2 tbsp ghee in a pan.

  2. Add gond crystals and fry on low-medium heat until they puff up.

  3. Remove and crush lightly using a mortar and pestle or blend coarsely.


Step 2: Roast the Flour

  1. In the same pan, add remaining ghee and roast whole wheat flour on low heat.

  2. Stir continuously for 10-12 minutes until it turns golden brown and aromatic.


Step 3: Prepare the Sweet Mixture

  1. Add fried gond, chopped nuts, coconut, and poppy seeds to the roasted flour.

  2. Stir well and cook for another 2 minutes.

  3. In a separate pan, melt jaggery with 1-2 tbsp water on low heat until smooth. (Do not overheat; just melt it.)

  4. Pour the melted jaggery into the flour mixture and mix quickly.

  5. Add cardamom powder and warm milk if needed for binding.


Step 4: Shape & Set the Gond Pak

  1. Transfer the mixture to a greased plate or tray.

  2. Press down evenly and let it cool slightly.

  3. Cut into squares or diamond shapes while still warm.

  4. Allow to cool completely before storing.
